July Cake




berries: blueberries, raspberries, strawberries, red currants… Or even apricots

150 sugar

100 g butter

3 beaten eggs

1,2 dl almond milk (or regular milk)

125 g almond powder

150 g flour

2 teaspoon baking soda

pine nuts

slivered almonds

Mix ingredients: beat sugar with butter, then add beaten eggs. Add 1,2 dl milk, then almond powder, flour and baking soda.

Pour batter in a greased pan. Gently add the fruits, pine nuts and slivered almonds.

Cook in a preheaten oven 180°C about 35 mn.

One more Summer treat…

You can mix blueberries with almond (or regular) milk agava nectar. Cold and healthy drink for hot and sunny summer days. If you use frozen blueberries, it’s good to know that they contain even more antioxidants than fresh blueberries…
